Tamale Cooking InstructionsIngrdients: yellow corn, corn meal, shortening, butter, sugar, cream, cheddar cheese, Ortega chiles. Instructions: Before heating, discard the parchment paper wrapping around the corn husks. For best results, steam the tamales in the top half of a steamer over boiling water. Do not let the water in the lower container touch the tamales. Cover the pot and steam for 10-15 minutes if thawed, 20-25 minutes if frozen; for mini tamales, steam 7 minutes if thawed, 15 minutes if frozen.
Meanwhile, in a saucepan over medium-low heat, warm mole sauce, stirring occasionally, until sauce is barely simmering, 12-15 minutes. Reduce heat to low. Tamales look great arranged over banana leaves on colorful platters, with a selection of sauces such as mango or tomatillo; serve with Mexican beer.
